About Retorts
This type of equipment is used for sterilization under high temperatures. Also called a canning retort, a retort is typically batch style. Different heating and cooling methods are available. Many retorts use pure steam to heat the contents. They do not have provisions for mixing of the container during processing. A retort is essentially an industrial pressure cooker.
